Chef Knives

A chef knife is the general-purpose blade of the kitchen, and ours are pattern-welded Damascus (1095 and 15N20) or forged carbon steel, mostly Damascus. Blades run from 3.5 to 13 inches across chef, santoku, kiritsuke, bread, paring and utility knives, and 8 inches is the common length.

About Chef Knives

What is a chef knife used for?

A chef knife chops, slices, dices and minces, which is why one blade covers most of the work on a cutting board. Its curved belly rocks through herbs. A santoku has a flatter edge and pushes straight through the cut instead of rocking.

What size chef knife should you get?

An 8 inch chef knife suits most kitchens. Go to 6 or 7 inches for a small board or smaller hands, and use a 9.75 or 13 inch blade only on a long board. Our santoku knives and Serbian chef knives have their own pages.

Damascus or carbon steel chef knife?

Pick a Damascus chef knife for the layered pattern, or a carbon steel chef knife for plain forged steel in a satin or forge scale finish. Both need drying and oiling. See Damascus chef knives, carbon steel kitchen knives and all kitchen knives.

Common questions

What is the difference between a chef knife and a kitchen knife?

Kitchen knife is the general term for any knife used in food preparation. A chef knife is one type, the broad all-purpose blade. Paring, bread, utility, fillet and steak knives are other kitchen knives with narrower jobs. Most cooks start with a chef knife and add the rest as they need them.

What are the three knives every chef needs?

A chef knife for most cutting, a paring knife for small work and peeling, and a serrated bread knife for loaves. This collection holds all three types: a paring knife with a 3.5 inch blade, a bread knife with an 8 inch blade and chef knives from 5.25 to 13 inches.

Are hand-forged knives good?

Yes, if you accept the upkeep. A forged blade holds a keen edge and can be sharpened at home on a stone. Forged carbon steel and Damascus need more care than stainless: dry the blade after use and oil it lightly. Left wet, both will rust.

What knife do most professional chefs use?

Most professional cooks do the bulk of their cutting with a chef knife, usually with an 8 inch blade. Ours come in 8 inch lengths with handles in rosewood, walnut, olive wood or resin, in Damascus and in forged carbon steel, each with a leather blade guard.

Can a chef knife be engraved?

Yes. The blade or the leather guard can be engraved as a paid option, and every chef knife ships with a char leather blade guard. Wood handles cannot be engraved, so the name or date goes on the steel or the leather.
