About Damascus Cleavers

Serbian cleaver or meat cleaver?

A meat cleaver has a thick, heavy, square blade that splits joints and cartilage and portions thick cuts. A Serbian chef knife, often called a Serbian cleaver, has a taller, curved blade that slices and chops vegetables and meat on a board. Ours come on rosewood, walnut, pakka wood, olive wood, micarta or horn handles.

What comes with a Crownridge cleaver?

Each cleaver comes with a leather blade guard, and a few larger pieces with a belt sheath. Our boning knives are forged carbon steel, in our carbon and satin steel knives. See our Damascus chef knives, a full Damascus knife set, or skinning knives for the field. Every Serbian chef knife, carbon steel and Damascus, is in Serbian chef knives.

Common questions

What is a meat cleaver used for?

A meat cleaver splits joints and cartilage, portions thick cuts and crushes garlic with the flat, using its weight rather than a sawing stroke. Let the blade drop straight down onto a wood or plastic board. Ours run 5.5 to 8 inches of blade and start at $119.

What is a Serbian chef knife?

A Serbian chef knife, sometimes called a Serbian cleaver, is a tall, curved, heavy blade forged for chopping and slicing on a board, from onions to a rack of ribs. It sits between a chef knife and a cleaver in weight.

Does the warranty cover chopping bone?

No. Our warranty covers kitchen knives and cleavers used on food, on a wood or plastic board; bone and frozen food are outside normal use. Use a meat cleaver on joints, cartilage and thick cuts, and a saw for large bones.

Is a Damascus cleaver worth it?

A pattern-welded Damascus cleaver costs more than a forged carbon steel one of the same size because of the extra forging, and it shows the layered pattern. Both cut the same way; choose carbon steel to spend less. Ours run $119 to $159.

How do you care for a carbon steel or Damascus cleaver?

Wash it by hand, dry it at once, and wipe on a thin coat of food-safe oil before storing it. Both steels rust if left wet, and neither goes in a dishwasher. A gray patina on carbon steel is normal and protects it.
